Quinoa & Black Bean Sala

Ingredients
  • 1 cup dry quinoa
  • 1 cup vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1/4 cup freshly squeezed lime juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 pinch cayenne pepper
  • 1 teaspoon salt
  • 1 red bell pepper, seeded and chopped
  • 1/2 red onion, finely diced
  • 3 green onions, chopped
  • 1/2 cup freshly chopped cilantro
  • 15 oz can black beans, rinsed and drained


Instructions
1. Cook quinoa according to package directions.

2. While the quinoa is cooking, stir together the olive oil, lime juice, vinegar, honey, garlic, cumin, cayenne, and salt in a bowl and set it aside. You can also chop all of your vegetables.

3. When the quinoa is ready and still warm, stir in the dressing, pepper, red onion, green onions, and black beans, and toss well to make sure the dressing is evenly distributed. Chill in the fridge for at least an hour before serving.
